Del Real Recipe Challenge - Carnitas Tacos with Cucumber, Roasted Corn, and Roasted Green Chile Salsa

I love Del Real foods!  They offer delicious Mexican style foods that are simple to turn into a fantastic meal for your family.  The best part is that their products make putting a meal on the table very easy.  You simply can warm their products and serve.  They are so good.  I decided to get creative with some of their products and create a fantastic taco recipe.  This is a recipe that you can have on the table in 30 minutes!  




Carnitas Tacos with Cucumber, Roasted Corn, and Roasted Green Chile Salsa. . . . 

Ingredients

Del Real Foods Carnitas

Del Real Foods Salsa de Molcajete Verde

Shredded Cabbage - (you can buy this already shredded in the produce section)

1/2 ear of sweet corn

1 tsp. margarine or butter

1 Persian Cucumber

6 oz. queso fresco

salt and pepper

10 corn tortillas

1 large lime


Directions

Take the 1/2 ear of sweet corn.  Rub with 1 tsp. margarine.  Season the corn with salt and pepper.  Roast the corn in the oven at 450 degrees for 10 to 15 minutes.  Slice the niblets off the corn and set aside.  

Finely dice the Persian cucumber.  Place it in a bowl with the corn niblets.  Add 1/4 cup of the Del Real Foods Salsa de Molcajete Verde.  Stir to combine.  Set aside.

Take the shredded cabbage.  This is one package of already shredded cabbage.  If you shred it yourself then use 1/2 of a head of cabbage.  Use 1/2 of the large lime and squeeze it on the shredded cabbage in a bowl.  Toss.  Season with salt and pepper.  Set aside.

Crumble the 6 oz. of queso freco.  

Warm the Del Real Foods Carnitas, and warm the tortillas in the microwave according to package directions.  

 Assemble your tacos - place carnitas in the tacos, then the cabbage, then the salsa mixture, and then top with the queso fresco.  Serve with extra lime wedges and squeeze on the tacos before you eat.  Enjoy!
