La Tortilla Factory Light Flour Tortillas



I love tortillas.  We use them for a variety of things in our house.  They are great for wraps, burritos, tacos, enchiladas and more.  What do you use them for?  I found out about La Tortilla Factory's Light Flour Tortillas and was excited to try them.  I love a lighter version of foods that I truly love.  




La Tortilla Factory's Light Flour Tortillas are lower in calories.  They are higher in fiber and protein too.  They taste great and that's important.  They are a healthy alternative to a regular tortilla.  They are great for quick meals too!  

One of our favorite meals to make with tortillas are enchiladas.  I knew that I wanted to make a lighter version of an enchilada with La Tortilla Factory's Light Flour Tortillas.  I altered the directions on the back of the can of enchilada sauce and I used the light flour tortillas instead.  I did not fry the tortillas.  I also chose to use a reduced fat cheese.  I love that this is a delicious and satisfying dinner with less calories than the original version of enchiladas!  


Light Enchiladas

Ingredients:

1 cup shredded cooked chicken

2 cups reduced fat cheese (of your choice)

1 package La Tortilla Factory Light Flour Tortillas

1 large can of enchilada sauce (of your choice)


Directions:

Mix 1 cup of shredded cooked chicken with 1/4 cup enchilada sauce.  Pour 1/4 cup of enchilada sauce in the bottom of the 11 by 13 pan.  Fill the inside of the light tortillas with about 2 TB. chicken and 2 TB. shredded cheese.  Roll up to form an enchilada.  Place it in the 11 by 13 pan.  Top your enchiladas with sauce - more or less depending on your taste.  Sprinkle with the remaining cheese.  Bake for 30 minutes covered at 350 degrees or until hot all the way through.

Serve with a side of rice and beans.
