Baking with Just Almonds Review



I love almonds.  They are one of my favorite nuts for snacking on.  Just Almonds offers almonds straight from the farm.  I truly was impressed with the almonds I received.  I sampled their raw whole almonds and they were so fresh.  They are some of the best I've ever had.  Just Almonds offers a variety of almonds that you can purchase right from them online.  They offer blanched almond flour, natural almond flour, almonds for eating, roasting almonds, sliced natural almonds and more.  






Just Almonds offers a quality product that comes from the Central California area.  I would call them almond experts after tasting their products.  They have been in the wholesale almond business for over 30 years.  I was really intrigued when I looked around the Just Almonds website and found out that almonds are not actually a nut, but they are a fruit.  Raw almonds are packed with nutrients too!  

I received 2 wonderful products from Just Almonds to sample.  I received some raw almonds and some almond flour.  I have had raw almonds before, but these are super fresh and delicious.  I snacked on them, but I also incorporated them in a recipe.  I have never used almond flour, but since I love almonds I knew this would be great.  This is great to use in baking.  It adds great flavor to many dishes.  I used the raw almonds and almond flour to make some mandel bread cookies.  This is actually my grandmother's recipe that I altered to include the almonds and almond flour.  I replaced some of the regular flour with almond flour in a recipe that I have.  It came out wonderful with the combination of the almond throughout the cookie from the almond flour and the pieces of almonds from the raw almonds.  These cookies are great for snacking, dipping in coffee or desserts.  






Almond Mandel Bread Cookies

Mix together . . . 

2 eggs
1/2 cup oil
1/2 cup sugar

Add. . . 

1 1/2 cups sifted flour
1/4 cup almond flour
1 tsp. baking powder
1/4 cup chopped raw almonds
1/2 tsp. vanilla 
1/2 cup semi sweet chocolate chips

Mix well.  Batter will be dry.  Make 2 loaves on floured board (will be oily).  Place on large cookie sheet.  Bake 20 to 25 minutes at 350 degrees.  Remove and slice into 1/4 inch slices.  Spread on baking sheet and toast at 400 degrees until slightly brown or dry.
