I decided I wanted to try and make something with these. I came up with a tasty cold pasta salad recipe. This incorporates Bella Sun Luci's sun dried tomatoes with a tangy dressing. I also added some grilled chicken, cheese and veggies. This is a great light meal with a slice of fresh bread. My family loved it.
Sun Dried Tomato Italian Pasta Salad
1 package cooked/rinsed and cooled pasta (of your choice)
1/2 cup Bella Sun Luci sun dried tomatoes (of your choice)
1/4 cup shredded cheese
3 vine ripened tomatoes chopped
1/2 cup chopped bell pepper
1 cup chopped chicken (pre-cooked)
1/2 cup Italian Dressing
2 TB vinegar
1/4 tsp minced garlic
Combine the 1/2 cup Bella Sun Luci sun dried tomatoes, 2 TB vinegar, 1/4 tsp garlic, and the 1/2 cup Italian dressing. Mix in a blender or food processor until smooth. Chop the chicken into bite size pieces. Combine the pasta, chopped tomatoes, bell pepper, and pasta. Toss with the dressing and enjoy. Serve with a side of fresh bread.
